Baked Cornish hens
This is an way to prepare Cornish hen making it juicy and delicious for a perfect dinner.
- 1/4 cup Olive oil
- 1 teaspoon Celery, chopped finely
- 1 teaspoon Poultry seasoning
- 1/2 teaspoon Rosemary finely cut, patted dry
- 1 pound Cornish hens, thawed, patted dry
- 1/2 cup Butter, melted
Into a mixing bowl, combine the first five ingredients, mix well. Rub the inside and outside of the chicken with the mixture. Tie up chicken and set aside for 15 minutes until well seasoned. Bake for 1 hour. Brush with butter and sprinkle with salt and pepper. Continue cooking for another 10-15 minutes with intermittent brushing of butter until tender. Serving suggestions: Serve with boiled maize, green salads and red wine.
