Rich minestrone
Serves: 4
Ingredients:
- 200 g thick soup of mixed vegetables
- 200 g minced veal
- 1 egg
- 20 g grated bread
- 30 g breadcrumbs
- 2 fennel flowerheads
- 1 teaspoon or fennel seeds
Preparation:
In a bowl mix the meat with the beaten egg, the cheese and the breadcrumbs (both) then flavour with the parsley and salt; mix well to create an even texture, then from into largish balls. Heat up the minestrone then add the meat balls and flavour with the fennel. Cook for ten minutes.
