Limoncello cake

Ingredients:

  • Nonstick cooking spray
  • 2 cups of yogurt
  • 4 small eggs
  • 1/4 cup of olive oil
  • 6 teaspoons of lemon juice
  • 6 teaspoons of lemon zest
  • 3/4 cup of refined sugar
  • 1/2 cup of limoncello liqueur
  • 3 cups of flour
  • 1 3/4 teaspoons of baking powder
  • 3/4 teaspoon of baking soda
  • 1 cup of confectioners’ sugar

Preparation:

Prepare the oven by preheating it to 360 degrees Fahrenheit. While waiting, spray a cake pan using a nonstick cooking spray. Mix the lemon juice, yogurt, olive oil, eggs, sugar, lemon zest, and 12 teaspoons of limoncello liqueur using a medium sized bowl. Using another bowl, combine the baking soda, baking powder, and flour. Slowly mix the dry ingredients. Transfer the batter in the cake pan prepared. Bake the batter for around 40 minutes making sure that it has a golden colored top. Let it cool for a few minutes. In another bowl, mix 6 teaspoons of limoncello liqueur and powdered sugar. Poke some holes in the cooled cake using a toothpick and the glaze mixture on top.
