Serves: 4

Ingredients:

  • 1 medium green marrow
  • 100 g diced fatty streaky bacon
  • 100 ml olive oil
  • 1 red onion
  • Parmesan rind
  • 50 g well cleaned fresh tomato
  • 100 g thinly sliced celery
  • 1 leg diced basil
  • Parsley
  • Oregano
  • Salt
  • Pepper

Preparation:

Peel and de seed the marrow and cut up into matchstick. Chop up the vegetables and put everything in a pan along with all the other ingredients and cook over a moderate heat for 30 minutes.
