Garlic prime rib roast

Servings: 8

Ingredients:

  • 2 tbsp minced garlic
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 2-3 springs fresh thyme
  • 5 lb boneless prime rib roast

Preparation:

Mix together all of the ingredients but the roast. Marinate the roast in the mixture overnight. I put my roast in a large roasting pan and poured the mixture over it, covered it with the lid, and refrigerated it overnight. Two hours before you get ready to cook the roast, remove it from the refrigerator and let it come to room temperature. Preheat your oven to 450 degrees F and roast uncovered for 15 minutes. Reduce the heat to 300 degrees F and roast for 2 hours or until a thermometer reads 130-136 degrees <f. It will be medium are. For rare, cook to an internal temperature of 120-125 degrees F. For well done, cook to an internal temperature of 145 degrees F.
