Cauliflower fried in batter

Serves: 6

Ingredients:

  • 1 kg cauliflower
  • 150 g flour
  • 2 eggs
  • Fillet anchovy
  • Salt
  • Pepper
  • Olive oil

Preparation:

Boil the cauliflower in salted water; drain when al dente and cut into pieces. Prepare the batter by beating two eggs in a bowl then mix in the flour until it falls like rain (with no lumps) and continue to beat with gusto, always in the same direction. Chop and add the anchovies to the batter; coat the cauliflower and fry in hot oil.
