Artichokes fried in batter

Serves: 6

Ingredients:

  • 4 artichoke
  • 2 cloves garlic
  • 2 eggs
  • 250 g flour
  • 1 lemon
  • 1 small bunch parsley
  • The tip of a knife yeast
  • Salt
  • Pepper
  • Olive oil

Preparation:

Prepare the batter by blending the flour in a saucepan with half a glass of tepid water. Blend in the yeast and beaten eggs and season with the parsley, minced garlic, salt and pepper. Leave to sit for half an hour. Meanwhile remove the hard spiny part of the artichoke and slice before boiling in water for five minutes with the lemon juice and a pinch of salt. Drain and dry before immersing in the batter; fry in hot oil.
