Spring peas with prosciutto

Serves: 4

Ingredients:

  • 4 tablespoons olive oil
  • 2 ounces thinly sliced prosciutto, torn into bite sized pieces
  • 1 small sweet onion, finely chopped
  • 1 pound fresh peas
  • Salt
  • Pepper

Preparation:

Heat the oil in a frying pan over medium heat, and add the onions and prosciutto. Cook until the onions are soft and the prosciutto begins to crisp, about 7 to 8 minutes. Add the peas and 1/2 cup of water, and cook just until the peas are tender and the water has evaporated, about 5 minutes. Salt and pepper to taste. Serve.
