Slow cooker red wine ribs

Servings: 4

ingredients:

  • 8 beef short ribs
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil
  • 5 cloves of garlic
  • 1/4 cup tomato paste
  • 16 oz dry red wine
  • 1 tbsp beef base or 1 beef bouillon cube
  • 3 cups hot water

Preparation:

Season the ribs generously with salt and pepper. Heat the olive oil in a skillet and brown the ribs for 4 minutes on each side. Transfer the ribs to your slow cooker. Pour the tomato paste and garlic cloves into the same skillet and cook until the garlic begins to soften. Pour in the wine and bring to a simmer and cook until the wine reduces by half, about 15 minutes. Pour the liquid into the slow cooker and add the beef base and hot water. Cover and cook on low for 6 hours or until meat is tender.
