Shrimp burgers

A seafood take on a hamburger. Simple & tasty.

Ingredients:

  • 2 Round rolls for crumbs (or use bought ones: 1 1/2 cups)
  • 1 1/4 lb Cleaned up shrimp
  • 1/3 cup Mayo
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Butter

Ingredients for serving:

  • 4 Hamburger rolls
  • 6 Lettuce leaves (Iceberg)
  • Tartar sauce

Preparation:

Make crumbs out of the buns (using a food processor) or use the bought crumbs. Empty into a large dish. Pulse the shrimp in the processor until fairly fine, but not mashed. Empty this into the bowl with the crumbs, add mayo & seasoning, then toss to combine. Shape into 4 patties. Heat a pan on medium & fry the patties in a little butter until cooked through, turning halfway (9 minutes). Serve on the cut buns with lettuce & tartar sauce.
