Pumpkin deviled eggs

Servings: 8-10

Ingredients:

  • 6 eggs, boiled, cooled, peeled
  • 2 tbsp mayonnaise
  • 2 tsp tomato paste
  • 1 tsp ketchup
  • 1/2 tsp paprika plus more to sprinkle
  • 1/2 tsp spicy brown mustard
  • 1/4 tsp Sriracha
  • Salt to taste
  • 1 green onion

Preparation:

Slice the eggs lengthwise and gently and gently remove the yolks. Place yolks, mayonnaise, tomato paste, ketchup, paprika, spicy brown mustard, Sriracha, and salt in a bowl and mash until very smooth. Spoon the mixture back into the egg white and pat the surface to make the yolks look smooth and round. Use a toothpick to make indentions in the yolks to look like the lines of a pumpkin. Sprinkle with paprika. Cut the onion to look like tiny pumpkin stems and place one stem at the top of each yolk.
