Italian stuffed chicken

Ingredients:

  • 2 tbsp chopped olives or sun dried tomatoes whatever you’ve got
  • One garlic clove, crushed
  • 1/2 tsp dried mixed herbs
  • 200 gr tub full fat soft cheese
  • Four plump boneless, skinless chicken breasts
  • Four ripe tomatoes, sliced
  • Olive oil, for drizzling

Preparation:

Heat the oven to 220°C. First put the olives or sun dried tomatoes, garlic and all the herbs into the cheese and start to beat them. After seasoning the entire mixture, slit open a small cut on chicken breast then use the knife to open a pocket. Stuff each breast the use the knife to open a pocket. Stuff each breast with some of the mixture made above and close the pocket. Then put the chicken on a greasy baking tray and season the top of chicken. Then put the tomato slices on top of chicken and season it and cater leftover herbs and drizzle some olive oil. Oven it for 20 minutes till the chicken becomes golden around the edges. The stuffed chicken is ready to serve with some green salad and crusty bread.
