Cranberry glazed ham

Serving: 16

Ingredients:

  • 2 cups fresh cranberries
  • 1/4 cup water
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1/2 tsp Cayenne pepper
  • 6 lb cooked and sliced spiral ham

Preparation:

Stir together the cranberries, water, and honey in a saucepan over medium heat. Stir for 5 minutes until the cranberries have popped. Stir in the Dijon mustard, vinegar, brown sugar, and Cayenne pepper. Cook for another 5 minutes until the sauce has thickened then remove from heat. Puree the sauce with an immersion blender or transfer the sauce to a regular blender with top vented open and covered with a hand towel or food processor. Preheat your oven to 325 degrees F. Place a rack in your roasting pan. Place the ham on the rack and use a brush to coat the ham with cranberry glaze. Place the pan in the oven and roast for 90 minutes or until the ham is hot all the way through. At the end of 90 minutes, brush more sauce on the ham and roast for another 20 minutes. Serve the ham with the remaining glaze.
