Serves: 6

Ingredients:

  • Ditali (a small pasta)
  • 500 g red or borlotti beans
  • 500 g pork rind
  • 200 g red onion
  • 1 tsp bicarbonate of soda
  • A pinch pepper or chili

Preparation:

Soak the beans overnight in a bowl water with the bicarbonate. Rinse well. Sauté the chopped or sliced onion in a little oil with the pork rind. Add the rinsed beans and cover with hot water. Season well and leave to cook for 45 minutes over a low heat. Add more hot water and adjust the salt. When the water is back on the boil add the pasta, season with some oil and the chili and cook as per the instruction on the packet.

Variation:

To create a tastier dish, during the initial cooking add a bone (with marrow) and a tablespoon of tomato salsa.
