Baked artichoke hearts

Servings: 6

Ingredients:

  • 3 jars artichoke hearts, drained and rinsed
  • 2/3 cup Italian bread crumbs
  • 1 cup parmesan cheese, divided
  • 2 tsp garlic powder, divided
  • Olive oil

Preparation:

Preheat your oven to 350 degrees F and grease an 8×8 baking dish with non stick spray. Boil the artichokes for 5 minutes then drain and pat dry. In a small bowl, combine the bread crumbs, parmesan cheese, and garlic powder. Divide into two equal parts and set aside in two separate bowls. Spread half of the artichoke hearts evenly in a single layer in the baking dish and top with half of the bread crumbs. Arrange the other half of the artichoke hearts on top of the first layer and top with the rest of the bread crumbs. Drizzle with olive oil and bake for 30-40 minutes until the top is golden brown.
