Tomato basil fettucine

Basil is a hearty herb that’s one of the easiest to grow at home. In fact, it’s so hearty and easy to grow, you’ll probably be giving your basil away at every opportunity.

Portions: Serves 3

Ingredients:

  • 3/4 pound of tomato fettucine
  • 1/4 cup of extra virgin olive oil
  • 2 cloves of garlic, minced
  • 2 1/2 cups of diced tomatoes
  • 1/3 cup of chopped basil
  • Sal
  • Pepper
  • 3/4 cup of chicken stock
  • 1/4 cup of grated Parmesan cheese

Preparation:

In a large, deep skillet, heat the oil over medium heat, about thirty seconds. Add the garlic and sauté until soft. Then add the tomatoes and basil and season with the salt and pepper. Sauté for about five minutes. Add the chicken stock and bring the entire mixture to a simmer. In a separate large pot, bring at least 4 quarts of water to a rolling boil. Add 1 tablespoon of salt. When the water is boiling, add the pasta, cooking according to the directions on the box. Drain.  Combine the pasta with the sauce in the skillet. Stir to combine, and top with the Parmesan cheese. Serve.
