Mashed potatoes

This hearty side item versatile serve it up alongside any main dish.

Ingredients:

  • 10 medium red potatoes, scrubbed
  • 1/2 yellow onion, chopped
  • 6 cup of chicken broth
  • 2 tablespoons of butter
  • 1/3 cup of milk
  • Salt
  • Pepper

Preparation:

In a large saucepan, boil the potatoes and anion in the broth until the potatoes are tender. Drain the liquid and reserve. Use a hand mixed to mash the potatoes and onions. Add the butter and milk. Continue to mix until the mashed potatoes reach the desired consistency. Add the reserved broth bit by bit if the potatoes are too stiff. Salt and pepper to taste.

Serving suggestion:

Sprinkle shredded cheddar cheese and bacon crumbles over the mashed potatoes before serving, if desired.
