Deep fried shrimp poppers

Great as an appetizer that pops up rich flavor of shrimp.

Ingredients:

  • 1/2 pound shrimp, peeled, with tails, back part sliced lengthwise
  • 1/2 fresh lemon, juicer
  • Salt
  • Pepper to taste
  • 4 tablespoons of all purpose flour
  • 1 whole egg, beaten
  • 2 tablespoons of milk
  • 6 tablespoons of bread crumb
  • Vegetable oil for deep frying

Preparation:

Preheat deep fryer to 350 F. Into a mixing bowl, mix shrimp with seasoning and lemon juice, set aside to marinate. Into 3 separate bowls, put flour, milk egg mixture and bread crumbs, respectively. Coat each shrimp with flour, then dip into milk egg mixture, shaking off excess mix, then lastly coat with bread crumbs. Place on plate and loosely cover with foil and place in fridge for 15 minutes (this will help the breading stick better than deep frying immediately). Deep fry in a single layer for 2-3 minutes each.

Serving suggestion:

Serve pineapple salsa and some dressed mixed leaves.
