Em uma tigela, coloque todos os ingredientes da marinada, misture bem com um garfo. Coloque as sobrecoxas dentro de um saco ou de uma vasilha com tampa, despeje a marinada, misture bem com as m\u00e3os e leve \u00e0 geladeira por pelo menos 1 hora. Acomode as sobrecoxas em uma assadeira antiaderente, despeje a marinada por cima e leve ao forno a 180 graus por cerca de 45 minutos, at\u00e9 dourar bem. Rale a cenoura no ralo mais fino e reserve. Pique a azeitona. Rale a cebola no ralo grosso e esprema para tirar todo o excesso de l\u00edquido. Misture com os outros ingredientes, inclusive com as passas, a salsa picada e a ma\u00e7\u00e3 cortada tamb\u00e9m em tirinhas sem casca. Acrescente o milho e ervilha. Preaque\u00e7a o forno em temperatura m\u00e9dia, por 10 minutos. Unte as coxas de frango com a maionese. Coloque em um refrat\u00e1rio coberto por papel laminado no forno por 25 minutos. Enquanto as coxas est\u00e3o no forno, corte as batatas e ferva por 15 min, apenas para pr\u00e9-cozinhar. Retire as coxas de frango do forno e acrescente as batatas pr\u00e9 cozidas, unte-as com manteiga (ou maionese). Envolva a costela j\u00e1 temperada no papel alum\u00ednio por tr\u00eas vezes (tr\u00eas folhas de papel alum\u00ednio). Deixando a costela em contato com o lado mais brilhante do papel, lembrando de apertar bem as bordas para ficar bem lacrado. Leve ao forno quente por 2 horas. Depois deste tempo retire o papel alum\u00ednio e deixe no forno para dar uma douradinha.
