Em uma panela, misture o leite condensado, o leite, a maisena, as gemas, a ess\u00eancia e a manteiga. Leve ao fogo m\u00e9dio, mexendo at\u00e9 engrossar. Retire do fogo, junte a gelatina reservada e mexa at\u00e9 dissolver. Divida o creme ainda quente em 2 partes. Em uma das partes misture o chocolate branco e mexa at\u00e9 dissolver. Deixe esfriar. Repita o procedimento com o chocolate ao leite. Em uma forma de buraco no meio de 24 cm de di\u00e2metro untada, alterne colheradas do creme branco e escuro e misture ambos levemente com um palito de dente. Alise a superf\u00edcie com uma colher e leve \u00e0 geladeira por 4 horas. Para a calda, misture os ingredientes em uma panela, leve ao fogo m\u00e9dio, mexendo at\u00e9 levantar fervura e cozinhar por 2 minutos. Deixe esfriar. Leve a forma ao fogo e deixe at\u00e9 derreter e formar um caramelo. Espalhe a calda por toda a forma. Desligue o fogo e reserve. Para pudim: Bata o leite, os ovos e o a\u00e7\u00facar no liquidificado. Bata por 1 minuto para misturar. Adicione as bolachas maizena, bata por mais 5 minutos. Despeje a mistura na forma caramelizada, em seguida coloque em banho-maria. Leve para assar em forno pr\u00e9-aquecido a 180C, por mais ou menos 50 minutos ounat\u00e9 ficar firme. Leve para a geladeira durante 10 minutos, retire, mexa de novo, cubra com pl\u00e1stico filme e deixe na geladeira durante toda a noite. Eu usei uma peneira na hora de por o pudim na forma para evitar que fique com furinhos. O amido vai ajudar na consist\u00eancia do pudim, para n\u00e3o correr o risco de ficar mole. Leve para assar em forno pr\u00e9 aquecido a 180\u00b0C, em banho-maria com a \u00e1gua j\u00e1 quente. Cubra a forma do pudim com papel alum\u00ednio nos 30 primeiros minutos, depois retire e asse por mais 30 a 40 minutos, ou at\u00e9 que o pudim esteja firme, mas quando balan\u00e7ar a forma ele dever\u00e1 ter uma textura que lembra gelatina. No liquidificador bata o leite condensado o creme leite, dissolva a gelatina no leite e coloque no liquidificador e bata por 5 minutos e coloque na forma por cima da calda caramelizada e leve para gelar.
