Calentar el aceite de oliva en una sart\u00e9n grande. Rehogar la cebolla hasta que est\u00e9 transparente. Agregar los marrones y cocinar por 5 minutos. Incorporar los tomates, y condimentar con sal. Tapar y cocinar por 10 minutos. Anadir el at\u00fan y el huevo duro. Retirar del fuego y reservar. Forrar una placa para horno con papel mantequilla. Colar el relleno de at\u00fan, dejando 2 cm en el borde. Doblar los bordes sobre el relleno. Cubrir con el segundo disco de masa. Juntar los bordes y pinchar con un tenedor. Usar el resto de la masa para decorar sobre la empanada gallega. Pintar con huevo batido. Llevar al horno por 20 minutos, o hasta que se haya dorado.
