Para el parfait helado: Mezclar o procesar el reques\u00f3n y el az\u00facar hasta lograr una crema suave. Con una batidora el\u00e9ctrica, batir la nata (crema de leche) hasta formar picos suaves. En un bol grande, combinar la mezcla de reques\u00f3n, las almendras y el turr\u00f3n; incorporar suavemente la crema batida y por ultimo agregar las frambuesas. Verter la mezcla en el molde preparado, cubrir con papel aluminio y congelar durante 6 horas o hasta que est\u00e9 firme. Mientras tanto, preparar la salsa de frutos rojos: En un bol, combinar las frambuesas y el az\u00facar. Cocinar a fuego lento, revolviendo hasta que las frambuesas por un tamiz o colador y descartar las semillas. Justo antes de servir, mezclar en un bol el pur\u00e8 de frambuesa con el resto de los frutos rojos. Cortar el parfait, luego llevar a la heladera durante unos 30 minutos antes de servir para permitir que se ablande un poco.
