Forrar dos asaderas redondas o pizzeras con papel manteca y aceitarlo o enmantecar por encima. En un bol grande, batir la mantequilla con el queso crema hasta conseguir una consistencia homog\u00e9nea y cremosa. Agregar la esencia de vainilla, la sal, todo el az\u00facar menos 2 cucharadas y mezclar. Agregar el resto de la harina y unir con cuchara de madera. Dividir la masa en 4 bollos y envolver cada uno con film transparente. Llevarlos a la heladera 2 horas o mejor a\u00fan toda la noche. Para el relleno: En un bol mediano, mezclar con cuchara las nueces, el az\u00facar rubia, los albaricoques (damascos), 2 cucharadas de az\u00facar y 1\/2 cucharadita de canela. Estirar un bollo sobre la mesada enharinada usando palo de amasar enharinado. Conservar los otros bollos en la heladera. Untar con 2 cucharadas de dulce de frambuesas. Salpicar con la mezcla de damascos y nueces. Presionando suavemente contra la masa para que se peguen en el dulce. Cortar en 12 porciones como di fuera una pizza. Comenzando por el lado m\u00e1s ancho, enrollar cada porci\u00f3n hacia la punta formando una media luna rellena de dulce. Colocar las media lunetas sobre la asadera dejando 3 cm entre una y otra. Repetir con el reto de masa. En una taza, mezclar 2 cucharadas de az\u00facar con el resto de canela. Pincelar las rugelach con leche y salpicar con la mezcla de az\u00facar. Hornear de 30 a 35 minutos o hasta que est\u00e9n doradas. Rotar las asaduras para que se cocinen parejo.
