Hervir durante 5 minutos, escurrir y reservar el caldo. Calentar 2 cucharadas de aceite en otra cacerola. Rehogar la cebolla revolviendo constantemente hasta que se haya puesto transparente. Agregar el perejil, el vino, los tomates, el ajo y el aceite de olivo restante. Cocinar a fuego lento, revolviendo ocasionalmente, durante 30 minutos o hasta que se espese la salsa. Mientras la salsa se est\u00e1 cocinando, los camarones deben haberse enfriado lo suficiente como para limpiarlos. Eliminar primero las patas tirando de la punta con tus dedos. Retirar la cubierta dura, dejando la cola que se ve muy bien en los platos. Incorporar los camarones a la salsa espesa y dejar cocinar a fuego suave durante 5 minutos. Agregar el queso y retirar del fuego. Dejar reposar hasta que el queso comience a derretirse.
