Engrase con mantequilla un molde desmontable (26 cm de di\u00e1metro) y espolvor\u00e9elo con pan rallado. Separe las yemas de las claras y monte las claras a punto de nieve. Cons\u00e9rvelas en el frigor\u00edfico hasta que las vaya a utilizar. Funda la mantequilla en un recipiente con poca altura y d\u00e9jela enfriar un poco. Bata las yemas con el az\u00facar y la sal hasta conseguir una mezcla cremosa. Incorpore la harina y, despu\u00e9s, a\u00f1ada la mantequilla fundida. Agregue las claras a punto de nieve e int\u00e9grelas cuidadosamente en la mezcla. Lave y seque las ciruelas, div\u00eddalas por la mitad y ret\u00edreles los huesos. Reparta la masa en el molde y coloque las mitades de ciruela imbricadas sobre la masa. Para<br \/>\nelaborar el crujiente, amase todos los ingredientes y desmigue la costra sobre las ciruelas.
