Corte las hortalizas en trozos peque\u00f1os. Pele los ajos y c\u00f3rtelos en trozos gruesos. Lave la carne. Caliente el vino, el caldo y el vinagre en una olla. A\u00f1ada la carne, la verdura, el ajo, el laurel, los granos de pimienta y la sal, y deje cocer durante unos 45 minutos. Deje enfriar en el caldo de la cocci\u00f3n.\u00a0 Saque el at\u00fan y las anchoas y d\u00e9jelos escurrir. Con la batidora, haga una pasta con el at\u00fan y 3 cucharadas del caldo de la cocci\u00f3n. Pique las anchoas muy finas. Mezcle 125 ml del caldo de cocer la carne con el zumo de lim\u00f3n y la mayonesa<br \/>\nhasta formar una crema. A\u00f1ada la pasta de at\u00fan y las anchoas, y remueva hasta que la textura sea uniforme. Salpimiente al gusto e incorpore las alcaparras. Saque la carne del caldo, d\u00e9jela escurrir y c\u00f3rtela en lonchas finas.
