{"id":18572,"date":"2019-01-24T15:03:42","date_gmt":"2019-01-24T14:03:42","guid":{"rendered":"https:\/\/www.irenemilito.it\/?p=18572"},"modified":"2019-01-24T15:03:42","modified_gmt":"2019-01-24T14:03:42","slug":"pesto-de-tomate-seco-y-avellana","status":"publish","type":"post","link":"https:\/\/www.irenemilito.it\/es\/pesto-de-tomate-seco-y-avellana\/","title":{"rendered":"Pesto de tomate seco y avellana"},"content":{"rendered":"<p><strong>Ingredientes para los tomates secos en aceite:<\/strong><\/p>\n<ul>\n<li>400 gramos de tomates secos<\/li>\n<li>1 litro de agua<\/li>\n<li>200 mililitros de vinagre de manzana, o vinagre bals\u00e1mico<\/li>\n<li>Ajo, laurel y guindilla<\/li>\n<\/ul>\n<p><strong>Ingredientes para el pesto:<\/strong><\/p>\n<ul>\n<li>250 gramos de tomates secos en aceite bien escurridos<\/li>\n<li>1 diente de ajo pelado<\/li>\n<li>50 gramos de avellanas<\/li>\n<li>50 gramos de queso parmesano rallado<\/li>\n<li>Entre 100 y 150 mililitros de aceite de oliva, utilizad el mismo aceite en el que conservo los tomates secos pues tiene un delicioso sabor.<\/li>\n<\/ul>\n<p><b>Preparaci\u00f3n para los tomates secos:<\/b><\/p>\n<p>En una olla llevar a ebullici\u00f3n el agua y el vinagre. Introducir los tomates y mantener as\u00ed durante unos minutos dependiendo de lo secos que estuviesen los tomates. Generalmente bastan entre 3 y 5 minutos, deben quedar blanditos pero enteros. Escurrir los tomates y dejar secar sobre un trapo bien extendidos varias horas o incluso un d\u00eda entero. Deben perder toda la humedad. Una vez secos, introducir en un frasco bien limpio y esterilizado con varios dientes de ajo ligeramente chafados, hojas de laurel u otras hierbas &#8230; y guindillas si quer\u00e9is que piquen muy ligeramente!. Llenar el frasco con aceite de oliva procurando que los tomates queden bien cubiertos para que no enmohezcan. Cuanto m\u00e1s tiempo pase, m\u00e1s buenos estar\u00e1n, y el aceite se convertir\u00e1 en algo delicioso que os recomendamos que utilic\u00e9is pues tiene un delicioso sabor a tomate seco. Pod\u00e9is conservarlo durante varios meses sin problemas.<\/p>\n<p><b>Preparaci\u00f3n\u00a0para el pesto:<\/b><\/p>\n<p>En un robot o batidora introducir todos los ingredientes salvo el aceite. Triturar todo el conjunto hasta obtener una pasta espesa. Con el robot en marcha a\u00f1adir el aceite en hilillo hasta obtener la consistencia que os interese. Como veis en las fotos, nos gusta dejarlo espeso. De ese modo luego lo podemos adaptar a muchos usos. Si lo us\u00e1is como salsa para pasta bastar\u00e1 diluir el pesto con un poco de agua de cocci\u00f3n.
