{"id":18550,"date":"2019-01-23T19:29:27","date_gmt":"2019-01-23T18:29:27","guid":{"rendered":"https:\/\/www.irenemilito.it\/?p=18550"},"modified":"2019-01-23T19:29:27","modified_gmt":"2019-01-23T18:29:27","slug":"pesto-a-la-genovesa","status":"publish","type":"post","link":"https:\/\/www.irenemilito.it\/es\/pesto-a-la-genovesa\/","title":{"rendered":"Pesto a la genovesa"},"content":{"rendered":"<p><strong>Ingredientes:<\/strong><\/p>\n<ul>\n<li>2 dientes de ajo<\/li>\n<li>50 gramos de hojas de albahaca<\/li>\n<li>15 gramos de pinones<\/li>\n<li>30 gramos de queso pecorino rallado (o en su defecto un buen queso de oveja curado)<\/li>\n<li>70 gramos de queso parmesano rallado (polvo)<\/li>\n<li>100 mililitros de aceite de oliva virgen extra (el mejor que teng\u00e1is)<\/li>\n<li>Sal gruesa<\/li>\n<\/ul>\n<p><b>Preparaci\u00f3n:<\/b><\/p>\n<p>Lavamos las hojas de albahaca y las secamos con un pa\u00f1o o papel de cocina con mucho cuidado. En un mortero ponemos los dos dientes de ajo con unas arenas de sal, y machacamos hasta obtener una pasta. A\u00f1adimos poco a poco las hojas de albahaca y las machacamos suavemente con movimientos circulares y constantes. Cuando ya est\u00e9 toda la albahaca batida y haya soltado ese precioso l\u00edquido verde, a\u00f1adimos los pi\u00f1ones y seguimos batiendo en el mortero. Incorporamos los quesos y el aceite de oliva poco a poco, y seguimos batiendo hasta conseguir la textura deseada. Podremos guardar nuestro pesto genov\u00e9s en el frigor\u00edfico durante unos d\u00edas, poni\u00e9ndolo en un frasco {preferiblemente fr\u00edo} y cubri\u00e9ndolo totalmente con aceite de oliva para evitar la formaci\u00f3n de moho. Tambi\u00e9n podremos congelarlo en peque\u00f1as porciones poni\u00e9ndolo en las bandejas de cubitos de hielo.
