Pela y ralla las papas, sum\u00e9rgelas en un recipiente con agua y un poco de sal un rato. Cuela el agua para preparar el relleno. Mezcla los chiles picados y desvenados, el perejil, las papas, el poro, y la carne molida de pollo, todo esto en crudo. Cierne tres veces la harina con la sal y el polvo para hornear. Mezcla con la manteca, agrega la leche, poco a poco, hasta formar una masa suave, no se debe amasar mucho tiempo y no debe quedar muy aguada. En una mesa con un poco de harina, extiende la pasta con un rodillo y corta c\u00edrculos de tama\u00f1o regular. Se puede utilizar un molde para hacerlo m\u00e1s r\u00e1pido. Agrega el relleno en el centro de cada c\u00edrculo, dobla como si se formara una quesadilla, agrega en las orillas clara batida con un tenedor y cierra los pastes doblando las orillas, debe quedar una orilla gordita. Barniza con huevo y calienta el horno a 250\u00b0 C. Introduce los pastes y hornea hasta que el relleno se cueza.
