Haz una fuente con la harina sobre la mesa de trabajo. Agrega la sal en el centro. Agrega, poco a poco, el agua en el centro. Empieza a integrar con los dedos lentamente. Agrega un poco m\u00e1s de agua y sirve mezclando. Mezcla hasta formar una masa homog\u00e9nea. Pesa la masa. En este caso son 404 gramos de masa. Debes pesar la mantequilla. Debe de ser la mitad del peso de la masa. En este caso son 202 gramos. Tapa la masa y deja reposar 10 minutos. Forma una bola con la masa sobre una mesa previamente enharinada, estira hacia arriba, abajo, a un lado y al otro como si fuera una cruz. Forma un cuadrado de mantequilla, col\u00f3calo en el centro de la cruz, y c\u00fabrelo. Extiende la masa con el\u00a0 rodillo siempre en la misma direcci\u00f3n hasta formar una tira larga. Dobla la masa tomando uno de los extremos hacia el centro y pasando el otro por encima. Gira la masa hacia la derecha, vuelve a estirarla, y dobla de la misma manera. Ah\u00ed ya llevar\u00edas dos vueltas; para saberlo m\u00e1rcala con dos dedos. T\u00e1pala con un pl\u00e1stico y deja reposar 20 minutos. Dale dos vueltas m\u00e1s de la misma manera, deja reposar 20 minutos y marca con cuatro dedos. Vuelve a hacer otras dos vueltas m\u00e1s para realizar un total de 6, dejando un reposo de 20 minutos entre cada dos.
