{"id":15813,"date":"2018-09-21T18:10:38","date_gmt":"2018-09-21T16:10:38","guid":{"rendered":"https:\/\/www.irenemilito.it\/?p=15813"},"modified":"2018-09-21T18:38:02","modified_gmt":"2018-09-21T16:38:02","slug":"bundt-cake-de-calabaza-y-caramelo","status":"publish","type":"post","link":"https:\/\/www.irenemilito.it\/es\/bundt-cake-de-calabaza-y-caramelo\/","title":{"rendered":"Bundt cake de calabaza y caramelo"},"content":{"rendered":"<p><strong>Ingredientes para el bundt cake:<\/strong><\/p>\n<ul>\n<li>213 g de mantequilla sin sal<\/li>\n<li>227 g de harina sin gluten<\/li>\n<li>167 g de harina de avena<\/li>\n<li>13 g de levadura quimica<\/li>\n<li>9 g de bicarbonato s\u00f3dico<\/li>\n<li>7 g de mezcla de especias<\/li>\n<li>1\/2 cucharadita de pimienta de Jamaica en polvo<\/li>\n<li>4 g de sal<\/li>\n<li>490 g de pur\u00e9 de calabaza asada<\/li>\n<li>220 g de butterlmilk<\/li>\n<li>1 cucharadita de extracto de vainilla<\/li>\n<li>365 g de az\u00facar<\/li>\n<li>4 huevos grandes<\/li>\n<li>100 g de chocolate para decorar<\/li>\n<\/ul>\n<p><strong>Ingredientes para el caramelo salado:<\/strong><\/p>\n<ul>\n<li>45 g de mantequilla fundida<\/li>\n<li>50 g de az\u00facar moreno<\/li>\n<li>60 g de az\u00facar<\/li>\n<li>125 ml de nata espesa<\/li>\n<li>7 g de sal gorda<\/li>\n<\/ul>\n<p><b>Preparaci\u00f3n:<\/b><\/p>\n<p class=\"p1\">Calentamos el horno a 180\u00ba C. Mezclamos la harina y la mantequilla del antiadherente, y untamos con un pincel nuestro molde de bundt. Lo metemos en la nevera cubierto con papel film. Tamizamos la harina sin gluten, la harina de avena, la levadura qu\u00edmica, el bicarbonato s\u00f3dico, la mezcla de especias, la pimienta de Jamaica y la sal, y las reservamos en un cuenco. Mezclamos el pur\u00e9 de calabaza asada, la vainilla y el buttermilk en otro cuenco, y reservamos. Batimos la mantequilla y el az\u00facar en un robot de cocina hasta blanquear, y a\u00f1adimos los huevos uno a uno. Reducimos la velocidad del robot al m\u00ednimo y a\u00f1adimos una tercera parte del tamizado de harinas, y una tercera parte de la calabaza con buttermilk. Continuamos a\u00f1adiendo el resto de harina y calabaza, pero siempre altern\u00e1ndolos. No es necesario batir demasiado. Echamos la masa en el molde de bundt cake y horneamos durante 45 minutos o hasta que el extremo de un term\u00f3metro para bundts o bizcochos se ponga rojo. Retiramos del horno, dejamos reposar 15 minutos, desmoldamos y dejamos enfriar sobre una rejilla.\u00a0Cuando est\u00e9 fr\u00edo lo ponemos sobre un stand de tartas, nosotros hemos elegido el stand verde menta de Ib Laursen. Para hacer el caramelo echamos la mantequilla, el az\u00facar moreno y el az\u00facar normal en un cazo, y llevamos a ebullici\u00f3n. Incorporamos poco a poco la nata espesa mientras mezclamos con una paleta de madera. Retiramos del fuego y echamos la sal. Mezclamos un poco y reservamos en una jarra peque\u00f1a hasta que est\u00e9 a temperatura ambiente. Vertemos el caramelo sobre el bundt cake.
