Lo habitual es prepararlos a base de papa, aunque existen otras variantes, como lo gnocchi amarillos (gialli), hechos con harina de ma\u00edz, o los gnocchi verdes, que se preparan con espinaca y ricotta.<\/p>\n<p><strong>Ingredientes:<\/strong><\/p>\n<ul>\n<li>1 kg de papas<\/li>\n<li>250 gr de harina<\/li>\n<li>Queso parmesano reggiano<\/li>\n<li>Sal<\/li>\n<\/ul>\n<p><b>Preparaci\u00f3n<\/b><strong>:<\/strong><\/p>\n<p>Cocinar las papas, pelarlas y machacarlas hasta obtener un pur\u00e9 fino. Colocarlas en un recipiente profundo, anadir el queso, la harina, un poco de sal y amasar hasta obtener una masa homog\u00e9nea. Formar cilindros con la masa y cortarlos en trozos de unos 3 cm de longitud. Enahrinarlos y aplastarlos con el pulgar, d\u00e1ndoles forma de peque\u00f1a concha con el mango de un tenedor. Cocinar en agua hirviendo con sal durante unos 10 minutos. Escurrir y servir con la salsa que se prefiera.<\/p>\n<p><strong>Las salsas de los\u00a0\u00d1oquis<\/strong><\/p>\n<p>Una versi\u00f3n m\u00e1s suave y delicada de los gnocchi se prepara cocin\u00e1ndolos en leche. Lo normal en este caso en no escurrirlos completamente, para que parte del caldo de la cocci\u00f3n se mezcle con la salsa.
