{"id":10863,"date":"2017-10-06T00:00:00","date_gmt":"2017-10-05T22:00:00","guid":{"rendered":"https:\/\/www.irenemilito.it\/masa-sablee-de-almendras\/"},"modified":"2017-10-06T00:00:00","modified_gmt":"2017-10-05T22:00:00","slug":"masa-sablee-de-almendras","status":"publish","type":"post","link":"https:\/\/www.irenemilito.it\/es\/masa-sablee-de-almendras\/","title":{"rendered":"Masa sabl\u00e9e de almendras"},"content":{"rendered":"<p><strong>Ingredientes:<\/strong><\/p>\n<ul>\n<li>200 gr de manteca<\/li>\n<li>130 gr de az\u00facar impalpable<\/li>\n<li>1\/2 cucharadita de sal fina<\/li>\n<li>1 cucharadita de esencia de vainilla<\/li>\n<li>1 huevo<\/li>\n<li>50 gr de polvo de almendras<\/li>\n<li>320 gr de harina<\/li>\n<\/ul>\n<p><b>Preparaci\u00f3n:<\/b><\/p>\n<p>Batir la manteca con el az\u00facar y la sal. Perfumar con la esencia de vainilla. Agregar el huevo y las almendras. Incorporar un punado de harina y luego el resto. Formar una masa, sin trabajarla demasiado. Cubrir con film y refrigerar por lo menos 1 hora antes de utilizar. Estirar hasta alcanzar un espesor de 3 o 4 mm. Hornear a 170-180\u00b0C.<\/p>\n<p><strong>Notas:<\/strong><\/p>\n<p>El polvo de almendras, tambi\u00e9n llamado harina de almendras, se obtiene por molienda de almendras peladas, sin tostar, y se vende listo para usar. Si se desea hacerlo en casa, sumergir las almendras en agua caliente 2 minutos, escurrirlas y frotarlas con un lienzo hasta desprender la piel. Secarlas en horno m\u00ednimo, cuidando que no tomen color, y dejarlas enfriar. Procesarlas r\u00e1pidamente para pulverizarlas sin que despidan el aceite que contienen. El polvo obtenido se puede fraccionar y guardar en el freezer hasta 3 meses. Esta masa conserva su forma mejor que la sable\u00e9 cl\u00e1sica porque el polvo de almendras le otorga mayor estructura.
