Enmantecar y enharinar una tortera de 23 cm. Procesar las avellanas con o sin piel hasta lograr un polvo fino. Agregar el polvo para hornear y reservar. En un bol grande, batir las yemas y el az\u00facar hasta lograr una crema de color amarillo p\u00e1lido. Incorporar las avellanas molidas. En otro bol limpio y seco, batir las claras hasta lograr picos firmes. Incorporar 1\/3 de merengue en la preparaci\u00f2n de torta y resolver. Agregar el resto de merengue y mezclar con movimientos suaves. Volcar en la tortera y llevar al horno. Hornear 60 a 75 minutos o hasta que el presionar la superficie con el dedo se siente esponjosa. Batir la nata a punto Chantilly y usar para rellenar la torta y cubrir por afuera.
