I love chickpeas and I adore chilli! The chilli gives a real kick to the chickpeas and chard. I use one whole fresh red chilli in this recipe, but you can adjust according to taste. You could omit it altogether if you prefer or, if cooking for people who don\u2019t like spicy flavours, just add some dried chilli (hot red pepper) flakes over the top of individual portions at the end. If you can\u2019t find Swiss chard, you can substitute spinach, but add this about 5 minutes before the end of the cooking time. Served with toasted<br \/>\nbread, this makes a delicious, warming meal.<\/p>\n<p><strong>Cooking time:\u00a0<\/strong>25 minutes (not including veg preparation)<\/p>\n<p><strong>Portions:\u00a0<\/strong>serves 2 as a main course or 4 as a starter<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"text_line\" data-position=\"5:62:0:0:0\" data-endposition=\"5:63:0:0:0\" data-complex=\"0\">1 tbsp extra-virgin olive oil<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:63:0:0:0\" data-endposition=\"5:64:0:0:0\" data-complex=\"0\">1 shallot, finely chopped<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:64:0:0:0\" data-endposition=\"5:65:0:0:0\" data-complex=\"0\">\u00bd celery stalk, finely chopped<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:65:0:0:0\" data-endposition=\"5:66:0:0:0\" data-complex=\"0\">1 garlic clove, finely chopped<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:66:0:0:0\" data-endposition=\"5:67:0:0:0\" data-complex=\"0\">1 fresh red chilli, finely chopped<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:67:0:0:0\" data-endposition=\"5:67:10:0:0\" data-complex=\"0\">180 g\/6\u00bc oz\/2 cups Swiss chard, stalk and leaves finely<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"5:67:10:0:0\" data-endposition=\"5:68:0:0:0\" data-complex=\"0\">chopped<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:68:0:0:0\" data-endposition=\"5:69:0:0:0\" data-complex=\"0\">200 g\/7 oz canned chopped tomatoes<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:69:0:0:0\" data-endposition=\"5:69:10:0:0\" data-complex=\"0\">1\u00d7400-g\/14-oz can of chickpeas (garbanzo beans) (240 g\/8\u00bd<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"5:69:10:0:0\" data-endposition=\"5:70:0:0:0\" data-complex=\"0\">oz drained weight)<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"5:70:0:0:0\" data-endposition=\"5:71:0:0:0\" data-complex=\"0\">400 ml\/14 fl oz\/1\u00be cups hot vegetable stock (bouillon)<\/span><\/li>\n<\/ul>\n<p><strong>Ingredients to serve:<\/strong><\/p>\n<ul>\n<li><span class=\"text_line\" data-position=\"5:73:0:0:0\" data-endposition=\"5:73:11:0:0\" data-complex=\"0\">2\u20134 slices of country-style bread, such as Pugliese or a nice<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"5:73:11:0:0\" data-endposition=\"5:74:0:0:0\" data-complex=\"0\">sourdough<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:74:0:0:0\" data-endposition=\"5:75:0:0:0\" data-complex=\"0\">1 garlic clove, peeled and left whole<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"5:75:0:0:0\" data-endposition=\"5:76:0:0:0\" data-complex=\"0\">Extra-virgin olive oil, for drizzling<\/span><\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat the olive oil in a heavy-based saucepan set over a medium\u2013high heat. Add the shallot, celery, garlic and chilli, and sweat for a couple of minutes. Stir in the Swiss chard and continue to sweat for 1 minute. Add the tomatoes, drained chickpeas and vegetable stock, bring to the boil, then lower the heat<br \/>\nto medium, cover with a lid and simmer for 20 minutes. Towards the end of the cooking time, grill (broil) or toast the slices of bread, rub the garlic clove all over the toasted surface of the bread, and drizzle with a little extra-virgin olive oil.Divide the soup between individual bowls, drizzle with a little extra-virgin olive oil, and serve with the garlicky toasted bread.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is one of my favourite soups.
