Here, to give the salad a fresh summery flavour, I have added fresh mint. Marinating the onions while waiting for the potatoes to cook gives a nice vinegary kick to the dish and, unless you really like lots of vinegar, you don\u2019t need to add any more to the salad. However, don\u2019t get rid of the vinegar marinade, because you can use it again. You could also marinate more onions than you need, keep them in the fridge, and use them to liven up other salads or sandwiches.<\/p>\n<p><strong>Cooking time:\u00a0<\/strong>12 minutes<\/p>\n<p><strong>Portions:\u00a0<\/strong>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"text_line\" data-position=\"4:80:0:0:0\" data-endposition=\"4:81:0:0:0\" data-complex=\"0\">400 g\/14 oz baby potatoes, washed, skins kept on<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"4:81:0:0:0\" data-endposition=\"4:82:0:0:0\" data-complex=\"0\">1 small red onion<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"4:82:0:0:0\" data-endposition=\"4:83:0:0:0\" data-complex=\"0\">Sea salt and freshly ground black pepper<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"4:83:0:0:0\" data-endposition=\"4:84:0:0:0\" data-complex=\"0\">10 tbsp white wine vinegar<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"4:84:0:0:0\" data-endposition=\"4:85:0:0:0\" data-complex=\"0\">3 tbsp extra-virgin olive oil<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li><span class=\"text_line\" data-position=\"4:85:0:0:0\" data-endposition=\"4:86:0:0:0\" data-complex=\"0\">12 mint leaves, roughly chopped, to serve<\/span><\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<div class=\"reader_column left_column\" data-colindex=\"0\">\n<div data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"4:87:0:0:0\" data-endposition=\"4:87:11:0:0\" data-complex=\"0\">Boil the potatoes in a large saucepan for about 10 minutes,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"4:87:11:0:0\" data-endposition=\"4:88:0:0:0\" data-complex=\"0\">until tender.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span data-selectable=\"0\">\u00a0<\/span><span class=\"text_line\" data-position=\"4:89:0:0:0\" data-endposition=\"4:89:11:0:0\" data-complex=\"0\">Meanwhile, finely slice the onion and place in a small bowl<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"4:89:11:0:0\" data-endposition=\"4:90:0:0:0\" data-complex=\"0\">with a pinch of salt and cover with the vinegar.\u00a0<\/span><span class=\"text_line\" data-position=\"4:91:0:0:0\" data-endposition=\"4:91:11:4:0\" data-complex=\"0\">Drain the potatoes and place in a serving bowl. Drain the mari<\/span><span class=\"text_line\" data-position=\"4:91:11:4:0\" data-endposition=\"4:91:22:0:0\" data-complex=\"0\">nated onions and add to the potatoes, mixing in gently.
