Her reasoning was that chickpeas were economical and just as full of protein as other more expensive foods. These are really fabulous on their own or served over a bed of cooked spinach for a filling but inexpensive light supper.<\/p>\n<p><strong>Portions:\u00a0<\/strong>Serves 6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<div class=\"reader_column left_column\" data-colindex=\"0\">\n<ul>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:8:0:0:0\" data-endposition=\"12:9:0:0:0\" data-complex=\"0\">One 14-ounce can chickpeas, rinsed and drained<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:10:0:0:0\" data-endposition=\"12:11:0:0:0\" data-complex=\"0\">1 small red bell pepper, cored, seeded, and cut into chunks<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:12:0:0:0\" data-endposition=\"12:13:0:0:0\" data-complex=\"0\">1 small zucchini, ends trimmed and cut into chunks<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:14:0:0:0\" data-endposition=\"12:15:0:0:0\" data-complex=\"0\">1 small carrot, scraped and cut into chunks<\/span><span class=\"text_line\" data-position=\"12:16:0:0:0\" data-endposition=\"12:17:0:0:0\" data-complex=\"0\">1<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:16:0:0:0\" data-endposition=\"12:17:0:0:0\" data-complex=\"0\"> leek, white part only, cut into rings<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\">1 garlic clove, peeled<\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:20:0:0:0\" data-endposition=\"12:21:0:0:0\" data-complex=\"0\">3 tablespoons extra-virgin olive oil<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:22:0:0:0\" data-endposition=\"12:23:0:0:0\" data-complex=\"0\">3 large eggs<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:24:0:0:0\" data-endposition=\"12:25:0:0:0\" data-complex=\"0\">1\u00bd cups dry bread crumbs<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:26:0:0:0\" data-endposition=\"12:27:0:0:0\" data-complex=\"0\">Canola oil for frying<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"12:28:0:0:0\" data-endposition=\"12:29:0:0:0\" data-complex=\"0\">Fine sea salt<\/span><\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Pulse the chickpeas in a food processor and transfer to a bowl. Set aside. Add the bell pepper, zucchini, carrot, leek, and garlic to the food processor and pulse until the vegetables are minced. Heat the olive oil in a saut\u00e9 pan and stir in the minced vegetables; cook until softened. Cool about 5 minutes. Transfer the vegetables to the bowl with the chickpeas. Add 1 egg and mix well. With wet hands form the mixture into 1-inch balls. Set aside. Beat the remaining 2 eggs in a shallow bowl and place the bread crumbs in another shallow bowl. Coat each ball in the beaten egg, then roll in the bread crumbs and place on a dish. When all the balls are coated, heat 4 cups of oil in a heavy bottomed, deep pot or in a deep fryer to 375\u00b0F. Fry the balls, a few at a time, until golden brown. Using a slotted spoon, transfer them to paper towels to drain.
