The Italian word crostini means little toasts because the bread is fried in a little olive oil, or grilled to toast it and then topped with an endless variety of savory spreads like artichoke and cheese. Crostini success depends on the quality of the bread; a country style loaf with a tight crumb is best, or a baguette is good, too; just don\u2019t use spongy, soft bread. This makes enough for a crowd.<\/p>\n<p><strong>Portions:\u00a0<\/strong>Serves 12<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<div class=\"reader_column left_column\" data-colindex=\"0\">\n<ul>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:8:0:0:0\" data-endposition=\"10:9:0:0:0\" data-complex=\"0\">4 garlic cloves, peeled<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:10:0:0:0\" data-endposition=\"10:11:0:0:0\" data-complex=\"0\">2 shallots, peeled and halved<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:12:0:0:0\" data-endposition=\"10:13:0:0:0\" data-complex=\"0\">\u00bd pound Parmigiano Reggiano cheese, grated <\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\">1 cup reduced-fat mayonnaise<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:16:0:0:0\" data-endposition=\"10:16:9:3:0\" data-complex=\"0\">Two 6-ounce containers mascarpone cheese or one 8-ounce block low <\/span><span class=\"text_line\" data-position=\"10:16:9:3:0\" data-endposition=\"10:17:0:0:0\" data-complex=\"0\">fat cream cheese, at room temperature<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:18:0:0:0\" data-endposition=\"10:19:0:0:0\" data-complex=\"0\">Juice of 2 limes<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:20:0:0:0\" data-endposition=\"10:21:0:0:0\" data-complex=\"0\">\u00bd teaspoon hot red pepper flakes or hot red pepper paste<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:22:0:0:0\" data-endposition=\"10:23:0:0:0\" data-complex=\"0\">Two 12-ounce boxes frozen artichoke hearts, thawed and drained<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:24:0:0:0\" data-endposition=\"10:25:0:0:0\" data-complex=\"0\">Olive oil spray<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:26:0:0:0\" data-endposition=\"10:26:11:0:0\" data-complex=\"0\">4 day-old baguettes, cut into <\/span><\/li>\n<li data-content-column=\"1\" aria-hidden=\"true\"><span class=\"text_line\" data-position=\"10:26:0:0:0\" data-endposition=\"10:26:11:0:0\" data-complex=\"0\">\u00bd-inch-thick slices and browned in olive<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"10:26:11:0:0\" data-endposition=\"10:27:0:0:0\" data-complex=\"0\">oil<\/span><\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat the oven to 400\u00b0F. Process the garlic and shallots in a food processor until finely<br \/>\nchopped. Add \u00bd cup of the Parmigiano Reggiano, the mayonnaise, mascarpone or cream cheese, lime juice, and red pepper flakes. Process until almost smooth, then add the artichoke hearts and pulse until coarsely chopped. Spoon the mixture into a 6-cup gratin dish, lightly greased with olive oil. Sprinkle the top evenly with the remaining Parmigiano Reggiano cheese. Bake for 20 minutes, or until bubbly. Serve hot with the toasted baguette slices and let everyone top their own. Jarred artichoke hearts in water can be used as a substitute for fresh.
