Slice off<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:23:12:0:0\" data-endposition=\"12:23:24:0:0\" data-complex=\"0\">the tips of the artichokes, remove all the tough outer leaves, and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:23:24:0:0\" data-endposition=\"12:23:35:0:0\" data-complex=\"0\">peel the base. Be merciless, however extravagant it may seem, for<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:23:35:0:0\" data-endposition=\"12:23:46:0:0\" data-complex=\"0\">one tough artichoke leaf can ruin an otherwise perfect mouthful. Cut<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:23:46:0:0\" data-endposition=\"12:23:57:2:0\" data-complex=\"0\">the artichokes into quarters. Remove the choke, if it has formed, to<\/span><span class=\"text_line\" data-position=\"12:23:57:2:0\" data-endposition=\"12:23:69:4:0\" data-complex=\"0\">gether with any prickly tips on the inner leaves. Then cut each quar<\/span><span class=\"text_line\" data-position=\"12:23:69:4:0\" data-endposition=\"12:24:0:0:0\" data-complex=\"0\">ter in three, so as to have very fine wedges.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:25:0:0:0\" data-endposition=\"12:25:13:0:0\" data-complex=\"0\">Slice the spring onions and put them in a heavy saucepan with 125<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:25:13:0:0\" data-endposition=\"12:25:25:0:0\" data-complex=\"0\">ml\/4 fl oz water. Cook over a medium heat, stirring constantly, until<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:25:25:0:0\" data-endposition=\"12:25:37:0:0\" data-complex=\"0\">the water evaporates. Add the olive oil and saut\u00e9 the spring onions<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:25:37:0:0\" data-endposition=\"12:26:0:0:0\" data-complex=\"0\">for a few minutes until pale golden.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:27:0:0:0\" data-endposition=\"12:27:14:0:0\" data-complex=\"0\">Add the artichokes, 125 ml\/4 fl oz hot water, and salt to taste. Cover<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:27:14:0:0\" data-endposition=\"12:28:0:0:0\" data-complex=\"0\">and cook over a low heat for 5 minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"12:29:0:0:0\" data-endposition=\"12:29:15:0:0\" data-complex=\"0\">Add the fava beans and 125 ml\/4 fl oz hot water. Cover and cook 5 more minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Add the peas. Cover and cook for 5 minutes more, then sprinkle<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>with the vinegar and some pepper. Correct the salt, and cook over a<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>medium high heat, uncovered, for 2 to 3 minutes, or until the vinegar has evaporated. Refrigerate for 24 hours and serve cold. Here and elsewhere in this book, the quantity of vinegar must<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>be considered a rough approximation and not a rule. I use a very<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>strong white wine vinegar that we produce on our farm; most commercial wine vinegars are considerably lighter.
