If you are not<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:25:13:0:0\" data-endposition=\"7:25:26:0:0\" data-complex=\"0\">able to buy the beans already peeled, buy 550 g\/1\u00bc lb of unpeeled<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:25:26:0:0\" data-endposition=\"7:26:0:0:0\" data-complex=\"0\">beans, then peel them after they have soaked.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:27:0:0:0\" data-endposition=\"7:27:12:0:0\" data-complex=\"0\">Put the drained and peeled beans in a heavy flameproof soup pot<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:27:12:0:0\" data-endposition=\"7:27:23:0:0\" data-complex=\"0\">(preferably of terra cotta) together with the 2.3 litres\/4 pints water,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:27:23:0:0\" data-endposition=\"7:27:36:3:0\" data-complex=\"0\">the fennel (sprigs or seeds), and some salt. Bring to a boil and sim<\/span><span class=\"text_line\" data-position=\"7:27:36:3:0\" data-endposition=\"7:27:48:0:0\" data-complex=\"0\">mer uncovered for 2 hours or until the beans are completely tender<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:27:48:0:0\" data-endposition=\"7:27:61:0:0\" data-complex=\"0\">and can be mashed against the side of the pot with a wooden<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:27:61:0:0\" data-endposition=\"7:28:0:0:0\" data-complex=\"0\">spoon. Stir frequently.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span data-selectable=\"0\">\u00a0<\/span><span class=\"text_line\" data-position=\"7:29:0:0:0\" data-endposition=\"7:29:13:0:0\" data-complex=\"0\">At this point you must decide whether you wish to eat your maccu<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:29:13:0:0\" data-endposition=\"7:29:29:0:0\" data-complex=\"0\">as a simple pur\u00e9e or to have it with pasta. In the latter case, thin the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:29:29:0:0\" data-endposition=\"7:29:42:0:0\" data-complex=\"0\">maccu with a 225-450 ml\/8-16 fl oz of boiling water, then add the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:29:42:0:0\" data-endposition=\"7:29:53:5:0\" data-complex=\"0\">pasta. Stir very frequently as the pasta is cooking, since maccu thick<\/span><span class=\"text_line\" data-position=\"7:29:53:5:0\" data-endposition=\"7:29:65:0:0\" data-complex=\"0\">ens and sticks very easily. For an added fillip, saut\u00e9 chopped onion<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"7:29:65:0:0\" data-endposition=\"7:30:0:0:0\" data-complex=\"0\">and tomatoes in oil until tender and stir in at the last minute.\u00a0<\/span><span class=\"text_line\" data-position=\"7:31:0:0:0\" data-endposition=\"7:31:12:5:0\" data-complex=\"0\">All versions require that you correct the salt and add a liberal sprin<\/span><span class=\"text_line\" data-position=\"7:31:12:5:0\" data-endposition=\"7:32:0:0:0\" data-complex=\"0\">kling of black pepper and of olive oil. Leftover maccu can be poured onto a platter and left to harden, then<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>cut into strips, floured, and fried in a little olive oil a special treat<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>for the peasant families of the past.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Wild fennel is just one of the seasonings that modern Sicilians have<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>inherited from the classical world. The broth that Apicius calls for<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><span data-lineindex=\"0\">in<\/span>\u00a0<span data-lineindex=\"1\">many<\/span>\u00a0<span data-lineindex=\"2\">of<\/span>\u00a0<span data-lineindex=\"3\">his<\/span>\u00a0<span data-lineindex=\"4\">recipes<\/span>\u00a0<span data-lineindex=\"5\">is<\/span>\u00a0<span data-lineindex=\"6\">garum,<\/span>\u00a0<span data-lineindex=\"7\">an<\/span>\u00a0<span data-lineindex=\"8\">essence<\/span>\u00a0<span data-lineindex=\"9\">made<\/span>\u00a0<span data-lineindex=\"10\">from<\/span>\u00a0<span data-lineindex=\"11\">fermenting<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>salted fish that was commonly used to flavour Roman cooking. In<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>spite of the rotten reputation that garum has acquired over the centuries, Vehling maintains that at its best it was akin to our modern<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>anchovy sauce.<span data-selectable=\"0\">\u00a0<\/span>In the letters written by the Marquis of Ormonde during his Sicilian<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>travels, there is an all too brief reference to a nineteenth century version of the same: The flesh [of the tuna] is good, and a sauce called<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>garum is prepared from it. Although salted tuna has disappeared,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>both anchovies and sardines, either in salt or in oil, occur in contemporary Sicilian cooking with much the same frequency and to<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>much the same end as garum in the Roman cuisine. In Syracuse, for<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>example, the most characteristic pasta dish is spaghetti with an anchovy sauce.
