a stand mixer fitted with the paddle attachment, com<\/span><span class=\"text_line\" data-position=\"48:22:12:3:0\" data-endposition=\"48:22:23:0:0\" data-complex=\"0\">bine cake flour, sugar, salt, and baking powder on lowest speed.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"48:22:23:0:0\" data-endposition=\"48:22:33:0:0\" data-complex=\"0\">Gradually add butter, mixing on low speed until pea-size lumps<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"48:22:33:0:0\" data-endposition=\"48:23:0:0:0\" data-complex=\"0\">form.<span data-selectable=\"0\" You may not need the entire amount. Press down on the center of each scone<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"48:25:23:0:0\" data-endposition=\"48:26:0:0:0\" data-complex=\"0\">with your thumb to make a divot for the ricotta cream.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"48:26:0:0:0\" data-endposition=\"48:26:11:0:0\" data-complex=\"0\">In a medium bowl, use a rubber spatula to combine ricotta,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"48:26:11:0:0\" data-endposition=\"48:26:22:0:0\" data-complex=\"0\">vanilla bean seeds, sugar, and almond extract. Place 1 tablespoon of ricotta cream in the center of each scone. Garnish with a slice of<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>peach set off to the side of the ricotta cream. Generously sprinkle<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>sugar on top of the scones. Place in freezer to chill at least 1 hour<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>before baking.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Preheat oven to 375\u00b0. Bake 15 minutes, rotate pan, and continue<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>baking until ricotta cream is golden brown and peach slices blister,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>about 15 more minutes. Cool 10 minutes and serve.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Tip: To split a vanilla bean pod, take the tip of a paring knife and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>run it down the center. Split one end open and hold it down against<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>a flat surface with thumb and index finger. Then take the blade of<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>paring knife and scrape along the split pod to extract the seeds.
