Tuck and tightly roll the dough over the cin<\/span><span class=\"text_line\" data-position=\"43:17:25:3:0\" data-endposition=\"43:17:39:0:0\" data-complex=\"0\">namon sugar, like rolling up a jelly roll. Work your way across to the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:17:39:0:0\" data-endposition=\"43:17:53:0:0\" data-complex=\"0\">other corner, keeping it snug as you roll, and then travel back to the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:17:53:0:0\" data-endposition=\"43:17:64:0:0\" data-complex=\"0\">other side, where you originally started. <\/span><span class=\"text_line\" data-position=\"43:17:64:0:0\" data-endposition=\"43:17:77:0:0\" data-complex=\"0\">It\u2019s important<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:17:77:0:0\" data-endposition=\"43:17:90:0:0\" data-complex=\"0\">to roll the dough tightly, so the foundation is strong and the dough<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:17:90:0:0\" data-endposition=\"43:17:102:0:0\" data-complex=\"0\">won\u2019t unravel later when it is portioned and cut. Press on the seam to make sure it<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:17:117:0:0\" data-endposition=\"43:18:0:0:0\" data-complex=\"0\">sticks.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:18:0:0:0\" data-endposition=\"43:18:14:0:0\" data-complex=\"0\">Position the brioche log so it is sitting on its seam. Join the two<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:18:14:0:0\" data-endposition=\"43:18:27:0:0\" data-complex=\"0\">ends of the log together to form a ring. Pinch the seams together.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:18:27:0:0\" data-endposition=\"43:18:39:0:0\" data-complex=\"0\">Transfer the ring to a parchment lined sheet pan and place in the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:18:39:0:0\" data-endposition=\"43:19:0:0:0\" data-complex=\"0\">freezer to firm up a bit, about 10 minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:19:0:0:0\" data-endposition=\"43:19:10:0:0\" data-complex=\"0\">Preheat oven to 375\u00b0. Remove chilled dough from freezer and,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"43:19:10:0:0\" data-endposition=\"43:19:24:0:0\" data-complex=\"0\">starting \u00bd inch from where the ends of the log meet, use a chef\u2019s knife to make a cut \u00bc inch from the center so that the center of the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>ring is still intact. Make seven more evenly spaced cuts in the same<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>manner to yield eight cuts in total. Twist each cut dough portion<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>clockwise so the cinnamon sugar swirl is showing.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Set aside to proof in a warm place until doubled in size, about 30<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Whisk egg in a small bowl to make an egg wash. Use a pastry<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>brush to apply egg wash to entire brioche ring. Bake until dough has<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>risen, about 12 minutes. Rotate pan and continue baking until golden brown and cinnamon sugar bubbles at the edges, about 12 more<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>While brioche bakes, make the glaze. Allow brioche ring to cool<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>10 minutes.
