Starting with the 9-inch<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"40:22:21:0:0\" data-endposition=\"40:22:35:0:0\" data-complex=\"0\">side, roll dough up like a jelly roll, and press edge gently to close<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"40:22:35:0:0\" data-endposition=\"40:22:47:0:0\" data-complex=\"0\">seam. Wrap with parchment paper and place in freezer to firm up,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"40:22:47:0:0\" data-endposition=\"40:23:0:0:0\" data-complex=\"0\">about 15 minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"40:23:0:0:0\" data-endposition=\"40:23:10:0:0\" data-complex=\"0\">Preheat oven to 375\u00b0. Place muffin tin in oven to heat the filling until bubbly, 3 to 5 minutes. Remove from oven and set aside to cool.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Remove sticky bun log from freezer and slice into 6 equal portions, each about 2 inches thick. Place each portion into muffin tin<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>with spiral showing. Set aside to proof in a warm place until dough<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>has risen above rims of molds, about 1 hour. Beat egg in a small<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>bowl and use pastry brush to apply egg wash.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Bake, rotating halfway through, until golden brown, about 36<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>minutes. Let cool 5 minutes. Turn pan upside down to release sticky<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>buns. Be sure to scrape all the pecan and caramelized schemer from<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>the muffin tin and spread onto buns.
