Set aside.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"31:27:0:0:0\" data-endposition=\"31:27:12:0:0\" data-complex=\"0\">Place chia seeds in a small mixing bowl. Add boiling water and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"31:27:12:0:0\" data-endposition=\"31:27:25:0:0\" data-complex=\"0\">mix well. Set aside for 5 minutes, allowing chia seeds to absorb all<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"31:27:25:0:0\" data-endposition=\"31:28:0:0:0\" data-complex=\"0\">the water. The chia seeds will plump up and become gelatinous.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"31:28:0:0:0\" data-endposition=\"31:28:11:0:0\" data-complex=\"0\">In another small bowl, whisk together soy milk and apple cider vinegar. Set aside for 5 minutes, allowing the soy milk to curdle and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>create a nondairy buttermilk.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Add chia seeds, soy buttermilk, coconut oil, and brown rice<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>syrup to flour mixture. Whisk until flours completely absorb wet<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>ingredients. Divide batter evenly among muffin cups, filling each<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>cup \u2154 full. Top each muffin with 3 plum slices.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Place on middle rack and bake 20 minutes. Rotate muffin pan<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>and continue baking until juice from plum slices bubbles and becomes jammy and a toothpick comes out clean, about 15 more minutes.
