But be warned, sometimes guests enjoy it so much they<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:4:27:0:0\" data-endposition=\"6:5:0:0:0\" data-complex=\"0\">never make it to the entr\u00e9e!<\/span><\/p>\n<p><strong>Portions:\u00a0<\/strong>Serves 10<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 pound dried chickpeas<\/li>\n<li>4 gallons vegetable stock<\/li>\n<li>4 shallots<\/li>\n<li>1 bulb garlic<\/li>\n<li>2 celeriac (celery root)<\/li>\n<li>2 pounds plum tomatoes<\/li>\n<li>1\/2 bunch fresh parsley<\/li>\n<li>2 tablespoon olive oil<\/li>\n<li>2 cups cooked bite size pasta of choice<\/li>\n<li>1\/2 cup fresh grated Asiago cheese<\/li>\n<li>Fresh cracked black pepper<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<div><span class=\"text_line\" data-position=\"6:24:0:0:0\" data-endposition=\"6:24:10:0:0\" data-complex=\"0\">Sort through the chickpeas, discarding any stones. In a large<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:24:10:0:0\" data-endposition=\"6:24:21:2:0\" data-complex=\"0\">stockpot, simmer the peas in 2 gallons of the stock for ap<\/span><span class=\"text_line\" data-position=\"6:24:21:2:0\" data-endposition=\"6:25:0:0:0\" data-complex=\"0\">proximately 2 to 3 hours, until the beans are tender. Drain.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:26:0:0:0\" data-endposition=\"6:26:10:0:0\" data-complex=\"0\">Peel and finely chop the shallots, garlic, and celeriac. Clean<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:26:10:0:0\" data-endposition=\"6:27:0:0:0\" data-complex=\"0\">and chop the tomatoes and parsley.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:28:0:0:0\" data-endposition=\"6:28:10:0:0\" data-complex=\"0\">Heat the oil in a large stockpot over medium temperature.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:28:10:0:0\" data-endposition=\"6:28:21:0:0\" data-complex=\"0\">Saut\u00e9 the shallots, garlic, and celeriac for 3 minutes. Add the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:28:21:0:0\" data-endposition=\"6:28:31:0:0\" data-complex=\"0\">tomatoes and saut\u00e9 for 1 minute. Add the remaining stock,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"6:28:31:0:0\" data-endposition=\"6:29:0:0:0\" data-complex=\"0\">the chickpeas, and parsley.
