The cheese is arranged over the dough and then the prosciutto and asparagus are laid out on top like spokes on a wheel. Placed two fresh basil leaves in the center of the pizza just before it is served.<\/p>\n<p><strong>Portions:\u00a0<\/strong>Make one 9-inch pizza; serves 1 or 2<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>5 spears asparagus, touch end removed, peeled<\/li>\n<li>2 1\/2 tablespoons extra virgin olive oil<\/li>\n<li>1 teaspoon fresh lemon juice<\/li>\n<li>Sea salt<\/li>\n<li>Freshly ground pepper<\/li>\n<li>1 portion (9-5 ounces) Neapolitan pizza dough at room temperature<\/li>\n<li>Caputo flour for dusting<\/li>\n<li>2 ounces Bel Paese cheese, cut into six 1\/4 inch thick slices<\/li>\n<li>5 thin slices (about 2 ounces) prosciutto di Parma<\/li>\n<li>2 large fresh basil leaves<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p><span class=\"text_line\" data-position=\"19:22:0:0:0\" data-endposition=\"19:22:15:0:0\" data-complex=\"1\"><span data-lineindex=\"1\">Position<\/span>\u00a0<span data-lineindex=\"2\">an<\/span>\u00a0<span data-lineindex=\"3\">oven<\/span>\u00a0<span data-lineindex=\"4\">rack<\/span>\u00a0<span data-lineindex=\"5\">in<\/span>\u00a0<span data-lineindex=\"6\">the<\/span>\u00a0<span data-lineindex=\"7\">upper<\/span>\u00a0<span data-lineindex=\"8\">third<\/span>\u00a0<span data-lineindex=\"9\">of<\/span>\u00a0<span data-lineindex=\"10\">the<\/span>\u00a0<span data-lineindex=\"11\">oven<\/span>\u00a0<span data-lineindex=\"12\">and<\/span>\u00a0<span data-lineindex=\"13\">place<\/span>\u00a0<span data-lineindex=\"14\">a<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:22:15:0:0\" data-endposition=\"19:22:28:0:0\" data-complex=\"0\">baking stone on the rack. Preheat the oven to 500\u00b0F. Drizzle 1\u00bd tablespoons of the olive oil and the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:23:25:0:0\" data-endposition=\"19:23:37:0:0\" data-complex=\"0\">lemon juice over the top. Season lightly with salt and pepper. Roast<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:23:37:0:0\" data-endposition=\"19:23:48:0:0\" data-complex=\"0\">until crisptender and nicely browned at the tips, about 12 minutes.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:23:48:0:0\" data-endposition=\"19:24:0:0:0\" data-complex=\"0\">Transfer to a plate to cool slightly.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:24:0:0:0\" data-endposition=\"19:24:12:0:0\" data-complex=\"1\"><span data-lineindex=\"1\">Remove<\/span>\u00a0<span data-lineindex=\"2\">the<\/span>\u00a0<span data-lineindex=\"3\">dough<\/span>\u00a0<span data-lineindex=\"4\">from<\/span>\u00a0<span data-lineindex=\"5\">the<\/span>\u00a0<span data-lineindex=\"6\">plastic<\/span>\u00a0<span data-lineindex=\"7\">bag,<\/span>\u00a0<span data-lineindex=\"8\">keeping<\/span>\u00a0<span data-lineindex=\"9\">the<\/span>\u00a0<span data-lineindex=\"10\">smooth<\/span>\u00a0<span data-lineindex=\"11\">top<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"19:24:12:0:0\" data-endposition=\"19:24:25:0:0\" data-complex=\"0\">side facing up. Place it on a lightly floured work surface and lightly dust the dough with flour. Using your fingertips (but not your nails),<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>press down on the dough to flatten it and push it outward into a<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>larger circle. Flip the dough over and repeat on the other side, and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>then flip the dough back over. (You always want the smooth side<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>up).<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><span data-lineindex=\"1\">Thinking<\/span>\u00a0<span data-lineindex=\"2\">of<\/span>\u00a0<span data-lineindex=\"3\">the<\/span>\u00a0<span data-lineindex=\"4\">circle<\/span>\u00a0<span data-lineindex=\"5\">of<\/span>\u00a0<span data-lineindex=\"6\">dough<\/span>\u00a0<span data-lineindex=\"7\">as<\/span>\u00a0<span data-lineindex=\"8\">a<\/span>\u00a0<span data-lineindex=\"9\">clock<\/span>\u00a0<span data-lineindex=\"10\">face,<\/span>\u00a0<span data-lineindex=\"11\">make<\/span>\u00a0<span data-lineindex=\"12\">a<\/span>\u00a0<span data-lineindex=\"13\">fist<\/span>\u00a0<span data-lineindex=\"14\">with<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>your left hand and place it firmly at the 9 o\u2019clock position, about 1<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>inch in from the edge (this will keep the edge of the dough slightly<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>thicker). Place your right hand at the 3 o\u2019clock position, putting your<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>thumb on top of the dough and your other fingers underneath. Lift<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>the dough and stretch it a bit. Move the dough a one-eighth turn<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>and repeat. Continue until you have evenly stretched the dough into<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>a 9-inch circle with slightly thicker edges.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><span data-lineindex=\"1\">Dust<\/span>\u00a0<span data-lineindex=\"2\">the<\/span>\u00a0<span data-lineindex=\"3\">pizza<\/span>\u00a0<span data-lineindex=\"4\">peel<\/span>\u00a0<span data-lineindex=\"5\">generously<\/span>\u00a0<span data-lineindex=\"6\">with<\/span>\u00a0<span data-lineindex=\"7\">flour.<\/span>\u00a0<span data-lineindex=\"8\">Using<\/span>\u00a0<span data-lineindex=\"9\">your<\/span>\u00a0<span data-lineindex=\"10\">hands<\/span>\u00a0<span data-lineindex=\"11\">and<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>working quickly, lift and transfer the dough to the pizza peel. Give<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>the peel a few shakes back and forth to make sure the dough isn\u2019t<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>sticking.\u00a0<span data-lineindex=\"1\">To<\/span>\u00a0<span data-lineindex=\"2\">top<\/span>\u00a0<span data-lineindex=\"3\">the<\/span>\u00a0<span data-lineindex=\"4\">pizza:<\/span>\u00a0<span data-lineindex=\"5\">Drizzle<\/span>\u00a0<span data-lineindex=\"6\">the<\/span>\u00a0<span data-lineindex=\"7\">remaining<\/span>\u00a0<span data-lineindex=\"8\">1<\/span>\u00a0<span data-lineindex=\"9\">tablespoon<\/span>\u00a0<span data-lineindex=\"10\">olive<\/span>\u00a0<span data-lineindex=\"11\">oil<\/span>\u00a0<span data-lineindex=\"12\">over<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>the dough, leaving a 1-inch border. Arrange the slices of cheese in a<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>single layer over the top. Arrange the asparagus like the spokes of a wheel evenly around the pizza. Arrange a slice of prosciutto between<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>each asparagus spear; drape the prosciutto so it curves rather than<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>laying it perfectly flat.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><span data-lineindex=\"1\">Give<\/span>\u00a0<span data-lineindex=\"2\">the<\/span>\u00a0<span data-lineindex=\"3\">peel<\/span>\u00a0<span data-lineindex=\"4\">another<\/span>\u00a0<span data-lineindex=\"5\">gentle<\/span>\u00a0<span data-lineindex=\"6\">shake<\/span>\u00a0<span data-lineindex=\"7\">back<\/span>\u00a0<span data-lineindex=\"8\">and<\/span>\u00a0<span data-lineindex=\"9\">forth<\/span>\u00a0<span data-lineindex=\"10\">just<\/span>\u00a0<span data-lineindex=\"11\">to<\/span>\u00a0<span data-lineindex=\"12\">make<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>sure the dough isn\u2019t sticking. Slide the dough from the peel onto the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>baking stone using a quick jerking motion with your arm. (Work<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>quickly to slide the pizza into the oven and close the door so the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>oven temperature doesn\u2019t drop too much). Bake the pizza until the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>crust is crisp and golden brown, about 8 minutes. Using the peel,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>remove the pizza from the oven and transfer to a cutting board.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>Place the basil leaves in the center of the pizza.
