When my kids were little, I used to put them to work shelling the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:31:0:0\" data-endposition=\"38:4:45:0:0\" data-complex=\"0\">peas that I bought in spring at our local farmers\u2019 market. This accomplished three<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:45:0:0\" data-endposition=\"38:4:61:0:0\" data-complex=\"0\">goals: it spared me from shelling the peas myself, so I could get on with prepping<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:61:0:0\" data-endposition=\"38:4:77:0:0\" data-complex=\"0\">the rest of dinner; it entertained my kids (my son always turned shelling into a race,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:77:0:0\" data-endposition=\"38:4:91:0:0\" data-complex=\"0\">while my daughter blithely ignored him); and it got the kids interested in peas,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:91:0:0\" data-endposition=\"38:4:107:0:0\" data-complex=\"0\">making them much more likely to eat the fruits of their labor. Although my kids are<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:4:107:0:0\" data-endposition=\"38:5:0:0:0\" data-complex=\"0\">now in middle school, this remains one of our favorite weeknight dinners.<\/span><\/p>\n<p><strong>Portions:\u00a0<\/strong>Makes 4 servings<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 tbsp unsalted butter<\/li>\n<li>1 tbsp extra virgin olive oil<\/li>\n<li>1 cup\/115 g finely chopped white onion<\/li>\n<li>2 oz\/55 g pancetta, cut into small dice<\/li>\n<li>1\/2 tsp minced fresh marjoram or thyme<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>6 to 7 cups\/1.4 to 1.7 l homemade chicken broth, homemade vegetable broth, or best quality low sodium, fat free commercial chicken broth<\/li>\n<li>1 small piece rind from wedge of Parmigiano Reggiano cheese (optional), plus 1 cup\/110 g freshly grated Parmigiano Regiano cheese<\/li>\n<li>1 1\/2 to 1 3\/4 cups\/170 to 215 g tubetti, ditalini, conchigliette (small shells), or other small pasta shape<\/li>\n<li>1 1\/2 cups\/215 g fresh or frozen peas<\/li>\n<li>Kosher or fine sea salt (optional)<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p><span class=\"text_line\" data-position=\"38:28:0:0:0\" data-endposition=\"38:28:15:0:0\" data-complex=\"0\">Warm the butter and olive oil in a Dutch oven or other heavy-bottomed pot placed<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:28:15:0:0\" data-endposition=\"38:28:29:4:0\" data-complex=\"0\">over medium heat. When the butter is melted, add the onion and pancetta, stir<\/span><span class=\"text_line\" data-position=\"38:28:29:4:0\" data-endposition=\"38:28:42:6:0\" data-complex=\"0\">ring to coat them thoroughly. Saut\u00e9 for 5 minutes, reducing the heat to medium-<span data-hidespace=\"1\" data-backspace=\"1\" data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:28:42:6:0\" data-endposition=\"38:28:57:0:0\" data-complex=\"0\">low if necessary to prevent the onion from burning. Sprinkle in the marjoram and a generous grind of pepper and continue to saut\u00e9 for another 5 minutes, or until the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>onion is translucent and the pancetta has just begun to crisp but is still mostly tender.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span><span data-selectable=\"0\">\u00a0<\/span>Pour in 6 cups\/1.4 L of the broth and raise the heat to medium-high. Toss in the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>Parmigiano rind (if using). Bring the broth to a boil. Stir in the pasta and peas,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>using 1\u00bd cups\/170 g pasta for a soupier soup and 1\u00be cups\/215 g pasta for a thicker soup. Cook the pasta until al dente (the cooking time will depend on the brand<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>and shape). Add an additional splash of broth if the soup seems too thick.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\" data-linebreak=\"1\">\u00a0<\/span>Remove the soup from the heat and stir in \u00bd cup\/55 g of the Parmigiano. Taste and<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>add salt and additional pepper, if you like. Ladle the soup into warmed shallow,<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>rimmed bowls and sprinkle with the remaining cheese. Serve immediately.<\/span><\/p>\n<p><strong>Note:<\/strong><\/p>\n<p><span class=\"text_line\" data-position=\"38:32:0:0:0\" data-endposition=\"38:32:13:0:0\" data-complex=\"1\"><span data-lineindex=\"2\">Freshly<\/span>\u00a0<span data-lineindex=\"3\">harvested<\/span>\u00a0<span data-lineindex=\"4\">peas<\/span>\u00a0<span data-lineindex=\"5\">are<\/span>\u00a0<span data-lineindex=\"6\">a<\/span>\u00a0<span data-lineindex=\"7\">sweet<\/span>\u00a0<span data-lineindex=\"8\">and<\/span>\u00a0<span data-lineindex=\"9\">delicate<\/span>\u00a0<span data-lineindex=\"10\">treat.<\/span>\u00a0<span data-lineindex=\"11\">But<\/span>\u00a0<span data-lineindex=\"12\">that<\/span><span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:13:0:0\" data-endposition=\"38:32:27:0:0\" data-complex=\"0\">sweetness does not last; the longer peas sit after being picked, the starchier they<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:27:0:0\" data-endposition=\"38:32:42:0:0\" data-complex=\"0\">become. If you are buying peas from a farmers market or grocery store, check to<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:42:0:0\" data-endposition=\"38:32:58:0:0\" data-complex=\"0\">see when they were harvested. Peas are at their best when used within a few hours<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:58:0:0\" data-endposition=\"38:32:74:0:0\" data-complex=\"0\">of being picked. Look for pods that are full but not bulging; overly mature peas are<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:74:0:0\" data-endposition=\"38:32:91:0:0\" data-complex=\"0\">tough and starchy and not nearly as sweet as smaller ones. If you buy peas in the<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span><\/span><span class=\"text_line\" data-position=\"38:32:91:0:0\" data-endposition=\"38:32:105:0:0\" data-complex=\"0\">morning and don\u2019t plan on cooking them until evening, leave them in their pods and store them in the refrigerator; this will help retain their sugar and flavor. You<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>will end up with about 1 cup\/140 g shelled peas from 1 lb\/455 g peas in the pod. If<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>you are unable to find freshly harvested peas, substitute good-quality frozen peas.<span data-selectable=\"0\" data-singlespace=\"1\" data-lineend=\"1\">\u00a0<\/span>In this recipe, add the peas without thawing them first.<\/span><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Soups are always a good way to introduce children to vegetables, and this one is\u00a0no exception.
