In a large mixing bowl, whisk together the egg, milk, cinnamon, brown sugar, and vanilla. Dip each slice of bread into the egg mixture and then place it in your slow cooker. Pour any remaining egg mixture on top of the bread in the slow cooker. Cooker on low 6-8 hours.
