Try this recipe on them &amp; see if you can change their minds.<\/p>\n<p><strong>Ingredients for eggplant:<\/strong><\/p>\n<ul>\n<li><span class=\"ingredient-amount\">1\/2 tsp<\/span>\u00a0<span class=\"ingredient-name\">Oil<\/span><\/li>\n<li><span class=\"ingredient-amount\">1<\/span>\u00a0<span class=\"ingredient-name\">Egg white, stirred &amp; in a little dish<\/span><\/li>\n<li><span class=\"ingredient-amount\">1\/2 cup<\/span>\u00a0<span class=\"ingredient-name\">Panko bread crumbs<\/span><\/li>\n<li><span class=\"ingredient-amount\">1 tbsp &amp; 1 tbsp (2 in total)<\/span>\u00a0<span class=\"ingredient-name\">Grated parmesan cheese<\/span><\/li>\n<li><span class=\"ingredient-amount\">1\/4 tsp<\/span>\u00a0<span class=\"ingredient-name\">Pepper<\/span><\/li>\n<li><span class=\"ingredient-amount\">1\/4 tsp<\/span>\u00a0<span class=\"ingredient-name\">Dried parsley<\/span><\/li>\n<li><span class=\"ingredient-amount\">4&#215;1\/2<\/span>\u00a0<span class=\"ingredient-name\">Thick slices of eggplant (peeled)<\/span><\/li>\n<\/ul>\n<p><strong>Ingredients for patties:<\/strong><\/p>\n<ul>\n<li><span class=\"ingredient-amount\">8 oz<\/span>\u00a0<span class=\"ingredient-name\">Ground beef<\/span><\/li>\n<li>A dash of garlic powder<\/li>\n<li>Yet another egg white<\/li>\n<li><span class=\"ingredient-amount\">1\/2 cup<\/span>\u00a0<span class=\"ingredient-name\">Marinara sauce, warmed up<\/span><\/li>\n<li><span class=\"ingredient-amount\">(1\/4 cup)<\/span>\u00a0<span class=\"ingredient-name\">Grated mozzarella cheese<\/span><\/li>\n<li><span class=\"ingredient-amount\">(aska rocket)<\/span>\u00a0<span class=\"ingredient-name\">Arugula leaves<\/span><\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Bring your charcoal\/gas grill to medium hot. Preheat oven to 375\u00b0F &amp; grease an oven proof dish\/baking sheet with oil.\u00a0Eggplant coating: Grab a shallow bowl &amp; mix a 1\/3 cup of the panko, 1 tsp of the parmesan, a dash of black pepper, &amp; the parsley flakes. Dip each eggplant slice in the egg white first &amp; then into the crumb mixture, then onto the prepared dish\/sheet. Lightly spray some cooking spray oven lot. Bake until golden &amp; crispy, turning the once 30 minutes.\u00a0Patties: While the eggplant is crisping &amp; cooking, mix the meat up with remaining panko, the second tablespoon of parmesan &amp; the second egg white. Add a dash of pepper &amp; garlic powder. Divide this mix up into 4 patties: 1\/2 thick. Pop them onto the grill, until internal temp is 160\u00b0F, turning once (8-10 minutes).\u00a0To serve: Top each golden slice of eggplant with a patty &amp; some marinara sauce.
